Made from 100% Pedro Ximénez, the grapes are traditionally sun-dried to concentrate their sugars before the wine undergoes an extended oxidative ageing process. La Cañada is matured for an average of more than 25 years in American oak casks, using the traditional criaderas y soleras system. This long ageing gives the wine remarkable depth and complexity while retaining an elegant freshness. The result is a dense, viscous and beautifully concentrated Pedro Ximénez, showing layers of raisins, dried figs, dates, coffee, cacao, chocolate and exotic wood. The wine has received outstanding critical recognition, including 96 points from Guía Peñín and 94 points from Robert Parker.
